eggsandwich

I watched with envy as Jared devoured his egg sandwich. It was a Wednesday morning. The café had opened after a two-day break, and Jared, Café Mimosa’s backyard tenant, had awoken after a long night’s rest. He strolled into the café through his preferred avenue — the kitchen — then parked himself at the bar. He had come for his morning fix: coffee, conversation and food —whatever his friend Chef Tim Nolan would willingly prepare. 

Last Wednesday, Jared lucked out. Within minutes of claiming his barstool, he received the above-pictured creation: a fried-egg B.L.T. Jared was overcome with joy. Wide-eyed and speachless, he gazed at his sandwich, affording the lowly busser (yours truly) time to snap a picture of the masterpiece. 

Mimosa patrons, I regret that you too cannot enjoy this item, as it has yet to appear on the Mimosa menu. Perhaps in time and with enough pestering, however, Chef Nolan might just be persuaded.
